Crostino Tomato & Burrata

Serves 4

Ingredients

  • 4 tablespoons olive oil divided
  • 1 loaf of Italian bread cut in half lengthwise, then widthwise
  • ½ pound cherry tomatoes halved
  • A pinch of salt
  • 3 garlic cloves divided
  • 2 8 ounce balls of fresh burrata
  • A bunch of basil leaves

Method

  • Preheat the oven to 350˚F. Place tomatoes in a small baking dish and add 2 tablespoons olive oil, a pinch of salt, and 2 cloves of minced garlic. Bake for about 20 to 25 minutes.
  • Heat 2 tablespoons of olive oil in a medium pan over medium heat. Add bread cut side down, and grill until golden brown and crisp, about 3 to 4 minutes per side. Remove from heat and let cool slightly. Use the remaining whole peeled garlic clove to rub the toasted bread with.
  • Using a butter knife, spread the burrata over the toasted bread's surface. Top with the cherry tomatoes and finish with fresh basil.
