1loaf of Italian breadcut in half lengthwise, then widthwise
½poundcherry tomatoeshalved
A pinch of salt
3garlic clovesdivided
28 ounce balls of fresh burrata
A bunch of basil leaves
Method
Preheat the oven to 350˚F. Place tomatoes in a small baking dish and add 2 tablespoons olive oil, a pinch of salt, and 2 cloves of minced garlic. Bake for about 20 to 25 minutes.
Heat 2 tablespoons of olive oil in a medium pan over medium heat. Add bread cut side down, and grill until golden brown and crisp, about 3 to 4 minutes per side. Remove from heat and let cool slightly. Use the remaining whole peeled garlic clove to rub the toasted bread with.
Using a butter knife, spread the burrata over the toasted bread's surface. Top with the cherry tomatoes and finish with fresh basil.
